EASY PEASY LEMON DRIZZLE LOAF

Ingredients

FOR THE CAKE

  • 170 g Self-Raising Flour
  • 170 g Caster Sugar
  • 170 g Butter
  • 3 Eggs
  • 1 tsp Baking Powder
  • Zest of 2 Lemons

FOR THE DRIZZLE

  • 110 g Icing Sugar
  • Juice of 2 Lemons

Instructions

FOR THE CAKE

  • Pre-heat your oven to 180° and line a loaf tin with parchment paper
  • Cream together your butter and sugar until smooth
  • Mix in your eggs, baking powder, flour and lemon zest
  • Pour your mixture into your loaf tin and bake for 30-35 minutes or until a skewer inserted comes out clean

FOR THE DRIZZLE

  • Mix your icing sugar and lemon juice together until combined
  • Once your cake is cooked, take a sharp knife and make small incisions along the top. Pour over your drizzle and leave to soak in
  • Once cooled, decorate your loaf with a sprinkling of icing sugar. Slice up and enjoy!
