
I love a sweet breakfast. Give me sugar over eggs or avocado on toast any day! These overnight oats are one of my favourite things to eat first thing – as well as tasting delicious, they’re packed full of nutrients and keep me full until lunch. Also, as they’re prepared the night before, they’re the perfect choice for when I have a busy schedule. Having a bowl of overnight oats waiting for me in the fridge stops me picking up a pastry or a sugary coffee on the way to work!
If you prefer your oats warm, you can always pop these in the microwave or on the hob in the morning to heat them up. Enjoy!
CHOCOLATE AND PEANUT BUTTER OVERNIGHT OATS
Ingredients
- 40 g rolled oats
- 50 g greek yoghurt
- 130 ml milk (any milk will work – I like coconut)
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tbsp peanut butter
- 1 tbsp cacao or cocoa powder
- Pinch of salt
Instructions
- Mix together all ingredients in a bowl or Tupperware box until combined
- Seal/cover completely and refrigerate for at least 2 hours (preferably overnight)
- The next morning, give your oats a stir and add more milk to loosen if necessary
- Add your toppings! I like fresh fruit, seeds and a little extra maple syrup
