I’ve really gotten into baking again these past few months. These muffins have been my favourite thing to make when I’m craving something sweet – they’re simple, delicious and a great way to use up over-ripe bananas. I like to put chocolate chips and walnuts in mine, but you can add whatever fillings you fancy. They also taste great plain.
I got this recipe from Lidia Mera on TikTok. She’s my go-to for cooking/baking inspiration!
EASY BANANA MUFFINS
Ingredients
- 4 ripe bananas
- 2 eggs
- 60 ml olive oil
- 180 g plain flour
- 100 g caster sugar
- 1 tsp baking powder
- Splash of milk
- Pinch of salt
- Handful of chocolate chips
- Handful of walnuts (optional)
Instructions
- Preheat your oven to 170° and line your muffin tray with cases
- Mash your bananas and add your eggs, milk and oil. Whisk until combined
- Sieve your flour, sugar and baking powder into your banana mixture. Stir until you have a batter
- Add your salt, chocolate chips and walnuts
- Spoon your batter into your cases
- Bake for 22 minutes or until a skewer comes out clean
- Wait to cool, then enjoy!
