EASY BANANA MUFFINS

Ingredients

  • 4 ripe bananas
  • 2 eggs
  • 60 ml olive oil
  • 180 g plain flour
  • 100 g caster sugar
  • 1 tsp baking powder
  • Splash of milk
  • Pinch of salt
  • Handful of chocolate chips
  • Handful of walnuts (optional)

Instructions

  • Preheat your oven to 170° and line your muffin tray with cases
  • Mash your bananas and add your eggs
  • Sieve your flour, sugar and baking powder into your banana mixture
  • Add your milk, salt, chocolate chips and walnuts
  • Spoon your batter into your cases
  • Bake for 22 minutes or until a skewer comes out clean
  • Wait to cool, then enjoy!
